Alex Atala has almost single-handedly put Brazil on the global culinary map with his Sao Paulo restaurant DOM, which has been named as the Best Restaurant in South America for the past few years. Since DOM appeared on the list, Atala's approach, scouring the country for forgotten, indigenous ingredients to create wildly different dishes, has influenced restaurants the world over.
